I performed the Gaggiuino mod on my evo pro…. Wow. Night and day difference. I’ve found that Heat/Temp control is a huge factor in pulling good spro.
Got a Gaggia Classic Pro two years ago as my first espresso machine. Had the same problem: shots were always too bitter, too sour, or both.
I too have the Gaggia Classic 2019 model. Personal opinion of course but I would ditch the pressurised basket and get a regular basket.

Comes with a fully articulating steam wand, 2 PID's and a low profile drip tray for room for a scale. Says it's a 12 bar pump with 9 bar brew pressure.

Saves me all the trouble modding anything. I’m so glad I waited all these years (9 years) before thinking of getting a Gaggia Classic. This might be a good buy!
